Cooking Without Photos – Squash Casserole

Aaaaahhhhh Hot Springs, AR! The Spa City. One of our fave places to visit. Sooo much history surrounds every element of the city. We love driving around and looking at all of the buildings. Okay, I look and my husband drives😆. It’s just beautiful!

One of my fave structures is the Catholic Church of St. John The Baptist. Finished in 1912, St. John’s has seen a few things the past over 100 years of service.

Hot Springs entered a growth spurt and a larger church was needed to accommodate the increase in population. After meeting and discussing plans, St. John’s began construction in 1909. It’s snow white bricks were made on-site with a machine from Ohio with only the whitest of sand.

The walls are 27 inches thick and the bell tower is 33 inches thick. The bells were ordered from the Henry Stucksede company in St. Louis, ring in G, A and D and weigh 2 tons! Three years after construction began, their doors opened on April 14, 1912.

It really is a sight to see❤️❤️❤️

While combing over, “The Catholic Church of St. John The Baptist” I stopped at Squash Casserole. Am I wishing for fall? Maybe🤷🏻‍♀️. It wasn’t like my Mama’s, but reading the ingredients sparked my interest. Anyway, let’s get into it!

Couple of things:

  1. The only way Stove Top ends up on my table is if it’s IN another recipe…it really does have a good flavor but it’s NOT dressing😆. Anyway, they don’t make 8 Oz boxes anymore so just monitor and adjust. I put in less squash🤷🏻‍♀️
  2. I didn’t slack off on the cheese though😆😆

Cooking Without Photos – Squash Dressing

Shoooooo it’s hot! I don’t know about y’all but there’s only so long I can go without some comfort food, no matter how boiling it is. I had to break down and let my husband make me a meatloaf😆. Hey, I made the sides to go with it. We’re a team after all!

Since meatloaf was on the menu, I decided to try something new with it. I found this week’s recipe in, “Recipes From The Flock: Third Assembly Of God Women’s Ministries” from Malvern, Arkansas.

Malvern was founded in 1870 by the Cairo and Fulton Railroad. Then in 1878, Malvern became the county seat of Hot Spring County.

Two neat things about Malvern.

  1. Grapette International calls Malvern home, maker of Grapette soda.
  2. Malvern is the brick capital of the world! What? Yes! They even have Brickfest each year. Brickfest, where there are brick throwing contests, a brick car derby and even a best dressed brick contest! Too bad we missed it this year. It’s always the last weekend in June. Bummer man!

This week I chose Squash Dressing. I’ve seen this several times and especially in southern cookbooks. I’ve never actually had it before though. Y’all, put this in your belly!! Seriously!!

One thing, it says to add 2 cups of milk. I judged my consistency by comparing this dressing to regular cornbread dressing. I ended up using 1 1/2 cup milk. Use your own judgement. Other than that. Go for it! You’re gonna love it!!

Cooking Without Photos – Calico Squash Casserole

Shoooweeee! It’s about that time in the South, y’all. That’s right. Squash every night time! If you have a garden, you know exactly what I’m talkin’ about. You try to sneak squash into every meal to use it all up. Then, you give away what you can’t use.

I found this recipe in the previously shared cookbook, “Hungry Like A Wolf: Lake Hamilton Bands”. Calico Squash? Sounds interesting. Let’s do it!

Couple of things:

  1. There’s no way to get exact “cups” of squash without cutting and leaving some behind for something else. I just used a tad more and put the mixture in a bigger pan.
  2. Years ago grocery stores carried 2 Oz jars of pimentos. Maybe they still make them. I couldn’t find any🤷🏻‍♀️. I used half of a 4 Oz jar and saved the rest for next time around.
  3. Make sure you really drain the squash. I’ll do better next time.
