Cooking Without Photos – Pistachio Cake

Y’all this one is going to be short and sweet. With a population of under 300, Edwardsport, Indiana, is a mystery town. I couldn’t find a whole lot if information anywhere.

Edwardsport was founded in 1832 in Knox County, Indiana. It was named after a man by the name of Edward Wilkes who was a surveyor.

I stumbled across “Cook Book” from the First Baptist of Edwardsport and immediately found a recipe I had forgotten.

Pistachio Cake! I remember my Grandma making this cake❤️

Couple of things:

  1. The recipe calls for Dream Whip. I used a whole small tub of Cool Whip. Don’t do that. Use about half of a small tub.
  2. It didn’t dawn on me that 1/2 cup of “Chopped nuts” should probably be pistachios until I was actually making the cake. I guess you could use whatever you want. Since I had to run to the store for pistachios, I put the 1/2 cup of nuts on top. I think it made it prettier anyway.

That’s it. Pretty straight and to the point. Light and great right out of the fridge on a hot summer day.
